Apple Cider Pancakes
Everyone loved these pancakes, except Wingnut Jr. Apparently he only likes sour apple flavored things.
Apple Cider Pancakes
(makes a ton of pancakes)
3 cups all purpose flour
1/4 cup sugar
2 tsp cinnamon
2 tsp baking powder
1 tsp baking soda
1 tsp salt
3 eggs
1/2 cup butter; melted and cooled
1 cup milk of your choice (I used almond milk)
1 cup apple cider
1 cup unsweetened apple juice
In a large bowl sift together dry ingredients. In another bowl whisk together the wet ingredients. Pour the wet ingredients into the dry and stir gently until just incorporated. Spoon by 1/4 cup onto a hot griddle. They will look very thick but will spread as they cook. Serve with warm maple syrup.
(ok, I didn't do that last step, but it sounds really yummy)
